Mike and Rosie Weems were so dedicated to their authentic Mexican street tacos, based on Rosie’s family recipes, they started their business in a small cart at a Farmer’s Market off Highway 75 in Hailey in 2008. They have steadily grown the business and you can now find locations of Calle 75 Tacos in the heart of downtown Boise with a second smaller location at The Village in Meridian, and this authentic Mexican restaurant is doing well with approximately 30 team members on board.
Mike says Calle 75 Tacos has evolved but they’re still most known for delicious fresh salsas, guacamole and their delicious meats like Carne Asada, Carnitas, Al Pastor and Chicken Tacos. It’s a unique menu designed to provide authentic flavors and was developed thoughtfully with high-quality ingredients.
Things really took off after Mike and Rosie brought in their chef, Tito de la Garza, who was born in Mexico City and attended culinary school in Guadalajara. He has brought an authentic Mexican regional style to Calle 75 Tacos, creating guest favorites, like Tacos al Pastor, which is stacked marinated pork with local bacon, onion and pineapple on a vertical broiler.
