Nicholas Jones, a successful entrepreneur, saw what a success public markets were in major cities, like Seattle and New York, and thought, why not bring one to Idaho? That’s why last month he opened Chow Public Market and Eatery in Boise.
Chow Public Market and Eatery includes 10 stations that are a mix of retail and restaurants. The retail selection, called Chow Market, is providing goods produced locally in Idaho, and some have hit it big, like Proof, which makes wood sunglasses. Chow Public Market and Eatery are the only ones in the state of Idaho carrying high-quality leather bags made in Germany, and offer a lifetime guarantee. There’s also Luxx, which provides handmade bath products and Truffles, Etc. with handmade chocolates.
The restaurants include Nick’s own restaurant GoodBurger, a coffee shop, gelato and a public kitchen called The Commissary, which offers commercial kitchen space for food entrepreneurs. Nicholas says Chow Public Market and Eatery is Idaho’s first public market, and he has loved introducing the concept to the Gem State, while also boosting state employment by bringing 30 employees on to this new business.
