The goal for Neil Zussman with his restaurant Mollie and Ollie, was to provide healthy food in a fast, casual setting. He spent two years developing the concept while renovating a prime location on Main Street in downtown Salt Lake City and loves the response his restaurant is getting since it opened in summer 2016.

All food at Mollie and Ollie is made from scratch and uses as many local ingredients as possible. Customers enjoy the healthy breakfast options like the oatmeal bowls and scrambles. The lunch menu includes wraps, salads or stir frys and the fresh-baked chocolate chip cookies are a favorite. The Thai Coconut Curry stir fry is a top-selling item. You can select one of the 8 stir frys or build your own, starting with a rice or noodle base, followed by protein, vegetables, sauce and finishing with the garnish you select. Customers appreciate this concept since almost 60 percent choose to create to their own.

Orders at Mollie and Ollie are done through a kiosk, and the system will remember your order to save you the hassle of trying to recreate it. The concept is taking off and at lunch it's not unusual to see long lines.
