Idaho is home to one of the biggest Basque populations in the United States, and Boise is working to preserve this rich history and culture with the Basque Block, which includes a cultural center, market and restaurants. One of the best known and a local favorite is Bar Gernika.
Bar Gernika has been a fixture on the Basque Block since the restaurant opened in 1991 and it’s known for authentic foods, wine and desserts, like flan and Basque-style rice pudding. Hands down the most popular dish is the croquetas, little balls of dough made with butter, onion, flour, chicken and milk that are deep fried, which customers love. There’s a lamb grinder sandwich and a pork sandwich with meat marinated in a sweet pepper sauce. Customers also come for the homemade fries, made from Idaho spuds and their own seasoning blend.
Current owner Jeff May started working at Bar Gernika as a prep cook and steadily worked his way up until he was cooking all the soups and many other dishes and roasting lamb. When the owner decided to sell, he bought the restaurant in 2008 and it’s steadily grown, earning great reviews on TripAdvisor.
