Speaking on Business: Mirror Lake Diner
Mirror Lake Diner is most known for their delicious homemade breakfast, served all day long.
This is Chris Redgrave for Zions Bank Speaking on Business.
Here’s a story told a million times. Gabe Morin came to Utah to attend school, fell in love with Utah’s famous powder and became a professional ski bum. He bounced around for a few years but eventually used cooking as his livelihood and became a professional chef at Alta. With his wife, Betty, Gabe founded Mirror Lake Diner in Kamas four years ago and it’s so popular they’re experiencing double digit growth every year, with customers as far away as Tooele and Orem.
Mirror Lake Diner is most known for their delicious homemade breakfast, served all day long. Customer favorites include the Loaded Eggs Benedict, with Canadian bacon, spinach, avocado and tomato, served on an English muffin, topped with hollandaise sauce. Or the Ledgefork Monster Burrito, which comes with over a pound of sausage, eggs, potatoes, cheese, onions and peppers. Dinner is served only on Friday and Saturday nights with customer favorites like trout or prime rib.
Gabe’s inspiration for his business name and menu came from looking at old maps with items like Ruth Lake Tuna Melt and Spring Hollow Cordon Bleu. Others are named after regular customers, including Susan’s Veggie Sandwich, with items on the kids’ menu named after his kids, whom he adores.
