At Boise Fry Company, the slogan is “Burgers on the Side” and that’s because their specialty and commitment here is … fries. With seven different potatoes and nine house-made salts and sauces, these are not ordinary French fries. The top seller is the Peruvian Purple Potato, and guests get a kick out of eating purple French fries. It’s followed closely by sweet potato fries for those looking for a healthier alternative.

Boise Fry Company CEO Brad Walker says the process starts with buying their potatoes fresh and local from Mike Heath of M&M Heath Farms in Buhl. Traditional fries take half an hour to prepare while the sweet potatoes and yams take over an hour which includes being hand cut, blanched and boiled before it’s ready to be fried and given to customers. This helps the potatoes maintain their flavor and quality. Fries are served unsalted so you personalize your fries with their seasoning and dipping sauces.

While the burgers at Boise Fry Company are not the main attraction, Brad says the same care and attention is given to the meat, so it’s regional, fresh, natural and grass fed. There’s also a vegan option, made from black bean and quinoa.
